The chef at Balsnes farm has a passion for food and drink, which shows in each dish he creates - with knowledge and ingenuity. Leon Knapskog has a passion for clean taste and the differet seasons, and wants to bring rough gourmet to the people!
Leon has previously worked at the Norwegian Royal Palace and the Royal Yacht. In Bergen worked at Restaurant Lucullus and Jacobs Bar & Kitchen. Leon has also worked at the Michelin restaurants Bouchon and The French Laundry in California, USA, and not least, he has been head chef at the Norwegian Embassy in Paris, France. Leon grew up in Hjelmelandsdalen, not far from Balsnes farm.
